For those of us privilledged enough to enjoy Mom's breakfast cookies, I thought I'd start the recipe portion of this blog off with these scrumptious, filling treats! Remember when you add your own recipe or post, to add a "Label" (the window right below where you add your post titled: Labels for this post) so that we can find the recipe later. Here we go:
Mom's Breakfast Cookies
Preheat oven to 350 degrees
Mix together wet ingredients:
3/4 c. brown sugar
3 eggs (Mom uses 1 whole and 2 whites)
3 T. milled flax seed
1 c. pumpkin or carrot or sweet potato puree
1 T. vanilla
Sift together dry ingredients:
1 t. salt
1 T. cinnamon
1 1/2 t. nutmeg
1 t. allspice
1 1/2 t. baking soda
1 c. rolled oats
2-3 c. whole wheat flour (or less, she said it might be even more like 1 1/2)
1/2 c. chocolate chips
1/4 to 1/2 c. chopped nuts
1/4 to 1/2 c. dried berries (she likes to use a cranberry, blueberry mix (both sweetened))
Add dry ingredients to wet and stir till combined, but don't over mix.
Stir in:
1 1/2c bran flakes
Bake till just barely cooked through, about 12 minutes -- don't over bake!
Makes about 2 dozen cookies.
(I would like to experiment with using molasses instead of sugar for the sweetener, and adding cocoa powder with the dry ingredients)
